Overview

Carbohydrates are one of the three main macronutrients in the diet, alongside protein and fat, and serve as the body's primary source of energy. Composed of sugars, starches, and fibers, they are broken down into glucose to fuel essential functions, particularly in the brain and muscles, while dietary fiber supports digestive health. Carbohydrates vary widely in their nutritional quality and in how quickly they affect blood glucose, and dietary patterns that emphasize different types and amounts of carbohydrate have important implications for energy balance, metabolic health, and the prevention and management of conditions such as obesity and type 2 diabetes. Within nutrition research, carbohydrates are studied across food composition, metabolism, and dietary intervention. Work relevant to this field has investigated low-calorie and non-caloric sweeteners, including evidence that monk fruit can serve as a safe, natural sweetener in individuals with type 2 diabetes, and has examined how energy intake affects glucose regulation and stamina. Related research has measured the protein-to-carbohydrate ratio of biological fluids and explored dietary approaches such as altered fat and carbohydrate intake in the context of weight and metabolic health. This page gathers peer-reviewed, open-access research relevant to carbohydrates and nutrition.
