Overview

Carbohydrates are one of the three main macronutrients, alongside protein and fat, and serve as a primary source of energy in the human diet. They range from simple sugars to complex starches and dietary fibers, and are found in foods such as grains, breads, fruits, vegetables, and legumes. The type and quality of carbohydrate, including the balance of refined versus whole-grain sources and the amount of fiber, influence energy intake, blood sugar response, gut health, and the risk of chronic disease. Fiber in particular is not fully digested but supports digestive function and feeds the gut microbiota, while sugars and starches are broken down to fuel the body's cells. Within nutrition science, carbohydrates are studied as part of overall dietary patterns and their effects on health. International Journal of Nutrition publishes peer-reviewed, open-access research relevant to this topic, including work on balanced diets and the food pyramid, the role of the gut microbiota in establishing an optimal diet, dietary approaches to fat loss and brain health, and the effects of a gluten-free diet. This page gathers open-access nutrition research relevant to carbohydrates for readers seeking primary evidence.
